Peppermint Hot Italian Hot Chocolate #shop

When the holidays roll around we are busy. I know I am because between the blog, baking, decorating, shopping and all the other fun stuff I can’t remember if I was coming or going. Also, that means less time with the girls, not that they mind. They are teenagers, they have more than enough to keep themselves occupied and most of the time they don’t want me around anyway.

However, that doesn’t mean we just go our separate ways and meet up after Christmas. I still like to savor moments with them and create memories. I try at least once a week to spend one evening with them and watch Christmas movies. One of our favorite treats is Peppermint Italian Hot Chocolate. If anyone has made Italian Hot Chocolate they know it can be a chore. I need to make ours quickly so we can get a movie in before bed, so I figured out how to make it, the easy way.

You can whip this up and then settle in to watch White Christmas before the opening credits rolls. First you need to gather your ingredients:

4 oz. Half and Half

4 oz. Nestle Coffe-mate Peppermint Mocha Creamer

1/3 c. Ghirardelli Double Chocolate Hot Chocolate

2 tsp. Cornstarch

2 tbsp. decaf coffee

Whipping cream to make homemade whip cream

Directions

In a small pan heat your half and half, creamer and hot chocolate. Whisking briskly, bring to a low boil. Boil for about 3 minutes and then gradually add your cornstarch using a small strainer so it doesn’t clump. Keep whisking briskly while adding the cornstarch. Let it build up to a rolling boil and let boil for about 5 minutes or until hot chocolate is creamy, thick and has no lumps. Remove from heat and let cool just a bit. Meanwhile add about 4 oz of whip cream to a small mixing bowl. With the mixer on medium beat until stiff peaks form.

Brew a small cup ( use the smallest cup setting on your Keurig or 2 tbsp of coffee to 1/2 cup of water in a brewer) of Donut Shop decaf coffee. Add two tablespoons to your warm hot chocolate mixture and mix well. Pour the hot chocolate into dessert cups, top with the whip cream, sprinkles and peppermint stirrer.

This is an awesome treat any time during the winter, not just the holidays. But for some reason it tastes better cuddled up under a Christmas blanket with Bing Crosby singing on the TV. It doesn’t get more homey than that.
