Nana Helen makes this fantastic Potato Casserole when she makes her Fried Chicken. She made it last night and I told her it would be a great recipe to share with you guys. It is rich and comforting, it goes with just about any main dish. We hope you love it as much as we do!
Ingredients
- 6 Medium Potatoes
- 2 cups of Sour Cream
- 2 cups of shredded cheddar cheese
- 4 tbsp. butter, melted
- 3 green onions, thinly sliced
- 1 tsp. salt
- 1/4 tsp. pepper
Instructions
- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat, cover and cook for 15-20 minutes. Drain and cool.
- Peel and grate potatoes, place in a bowl. Add the sour cream, cheddar cheese, 3 tbsp. butter, green onions, salt, and pepper.
- Transfer to a greased 2 1/2 baking dish. Drizzle with remaining butter. Bake, uncovered, at 350 degrees for 30 to 35 minutes or until heated through. Refrigerate any left overs.

She usually makes another one called Autumn Potatoes but it is loaded with calories. So she thought she would try this one because it seemed so much lighter. It was delish. I can’t wait for you to see our try with the bacon recipe. It was soo good!
