You scream, I scream, we all scream for ice cream! Admit it, you totally read that in a shouty voice. It’s okay because I wrote it in a shouty voice. I love frozen treats during the summer. As soon as the weather starts turning warm I start thinking how nice it would be to have some ice cream. Frozen treats today go far beyond what they were many, many, manyyyyy years ago. When ice cream first started getting noticed ( food historians are still arguing about where it originated and I am letting them do that because I just want to eat it ) it was more custardy type dessert that was chilled. The colder it got, the firmer it became. Since it was made from the richest part of milk, known as sweet cream, it was called ice cream. There was no shaking or fancy machines back then, which makes me wonder how making ice cream got so complicated. My Mom has a very old cookbook that was passed down to her by her grandmother and inside is a recipe for ice cream. It is made with vanilla bean, rich cream, egg yolk, and a little salt. You boil the ingredients and then set them into little molds. Then you put those molds in your freezer ( known as ice houses and only the rich had them). If you were not rich enough for an ice house, you were advised to put them in the coldest place in your cellar. No preservatives there folks, just rich ice cream.
Of course now you can get everything from gelato to frozen hot chocolate. Gone are the days of just simple ice cream. There are hundreds of brands, hundreds of combinations and sweet treats right in your grocers freezer. Right now Greek Yogurt is all the rage and is gaining steam, mostly from Moms that are wanting to serve their kids a healthy sweet treat.
I love making ice cream at home in my trusty machine. We do a lot of treats including ice cream, frozen coffees and berry sorbets. I scour the internet looking for recipes all the time and wanted to share some of my favorites with you. Some of them are really quick and easy to make, some a little more complicated. Either way you are definitely going to find something you want to serve at your next ice cream social!
