This recipe is so easy that I am almost ashamed to post it here..almost. I mean I am a food blogger. I should be bringing you something amazing, with a lot of ingredients and step by step photos. Not a recipe that only has 3 ingredients and isn’t even homemade, right?
That is nice and all but I am busy, just like YOU! I don’t have time to make everything homemade and I envy the food bloggers that are super duper popular because they can. I decided to bring you this recipe and dedicate it to all the busy Moms that want to bake but don’t have the time and to everyone that just loves dessert!
These are so moist and so delicious. People WILL ask you to make them..A LOT. So don’t say I didn’t warn you. Also, when you are basking in the compliments such as “These are amazing.!” “Wow, you must have worked hard on these!” don’t forget about me and you can say “My super baker fairy gave me the recipe!”. You’re welcome.
Cherry Pie Cupcakes
Ingredients:
1 cake mix ( any choice, I used yellow)
3 eggs ( room temperature)
1 can of pie filling ( any flavor, I used cherry)
Super Hard Directions ( or at least that is what you are going to tell everyone
)
Open the cake mix bag and dump it into a large mixing bowl. Crack each egg in the bowl ( no shells please, crunchy cupcakes are NOT awesome), and then open your can of pie filling and dump it into the bowl. This is where I like to dance to Dancing Queen just so I can say it takes longer than it actually does. You can dance too:
Preheat your oven to 350 degrees. Mix everything real good and by hand. If you use a mixer it breaks up your pie filling and I like having the whole fruit in mine. Line a cupcake pan with liners and then using an ice cream scoop, scoop your super secret ( REMEMBER you are not telling people how long these really took! or that there are only 3 ingredients. This is OUR secret.Unless you want to share my blog with the masses, then I am totally cool with that :D) mix into each one. Bake for 10 to 12 minutes or until a toothpick inserted comes clean. Cool completely and frost with a frosting of your choice. My Angel Buttercream is good on them or if you want chocolate cherry pie cupcakes you can top with my Ganache. I did a simple powder sugar glaze.
