I am still so ready for fall and more importantly, fall recipes! It was a little chilly last night so I settled in with a cup of hot apple cider and that made me think of all the apple cider recipes I will be enjoying this fall, yay! Over the summer I don’t do a lot of baking because it is so hot and I hate to heat the kitchen up, so when it starts to get cold my thoughts turn to baked goods. One of my favorite ingredients to use is M&M’s because they are just so dang delicious!
I like my cookies to be a little chewy and soft. That is why I love this M&M cookie recipe. Especially right out of the oven when the M&M’s are just a little melted but still crunchy. I have tried dozens of M&M cookie recipes ( literally) but this one is the one I turn to all the time. It’s gooey, sticky and soft, just what a cookie should be. Pair it with coffee, tea or apple cider and you are in heaven.
Look at how cute the fall M&M’s are! I could just eat them up and I am already thinking of all the great recipes I can use them for when tailgating ( Go Ravens!) or having bonfires. We love bonfires and do them a lot in the fall. There is just something so awesome about sitting around a huge fire with your marshmallows, hot dogs and apple cider. My warm vanilla apple cider with home made whip cream is a favorite among friends and family. The vanilla puts a spin on the apple cider and the whip cream sits on top and gives you whip cream nose which you have to admit, is totally fun!

- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- ¾ teaspoon salt
- 1 teaspoon baking soda
- ¾ cup brown sugar
- ¾ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla paste or 1 tablespoon vanilla extract
- one 12-ounce package of Fall M&M’s
- 15 unwrapped caramel pieces
- Pre-heat your oven to 350 degrees.
- In a bowl, mix together flour, cornstarch, salt and baking soda. Set aside.
- In a large bowl, cream together butter and both sugars on until light and fluffy (2-3 minutes). Add in egg and vanilla. Mix until thoroughly incorporated.
- Add your dry ingredient a cup at a time until dough forms. Stir in M&Ms by hand. Refrigerate dough for at least 30 minutes.
- Spray your cookie sheets with Pam for baking or Bakers Joy.
- Spray your hands lightly ( this dough is a little sticky) and using a cookie scoop form dough into balls. Bake for 10 minutes or until edges are golden. Remove and let cool a little before transferring them to a wire rack.
- Melting Caramel:
- In a microwaveable bowl place your caramel. Add one tbsp. of water. Microwave at 30 second intervals, stirring after each one until totally melted. Let it cool for about 5 minutes. Cut the tip off of a pastry bag and fill with the caramel. Drizzle over your cookies. Store in an airtight container with layers of wax paper in between cookies.
- 6 cups of Motts Apple Juice
- 1 cinnamon stick grated
- 1 tbsp of honey
- 1 vanilla bean, split and scraped
- 1 tbsp of vanilla extract ( use real extract, not imitation)
- 2 tbsp. brown sugar
- 15 whole cloves
- 1 cup of heavy whipping cream
- Pour your apple juice into a heavy, large pot. Add you cinnamon, honey, vanilla bean scrapings, extract , brown sugar and cloves.
- Bring to a boil and then lower the heat to a simmer. Let simmer for about 30 minutes for a less sweet apple cider. If you want it sweeter, simmer longer.
- Pour your whipping cream into a small bowl. With an electric mixer on high beat until it is stiff.
- Pour your cider into mugs and add your whipped cream. You can garnish with cinnamon or nuts if you like.
