I already told you that Nana Helen is a cookbook fanatic and well, I am just as bad with magazines. Food Network, Martha Stewart Living, Food and Wine, you name it I probably am subscribed to it. I got the new Rachael Ray magazine the other day and finally sat down to look through it. I always pay attention to the advertisements because you never know what you are going to find. So imagine my surprise when I saw an ad for Domino Sugar and the recipe was for All-in-One Cake and Frosting. My first reaction? Say what?
I kid you not, it was all-in-one. So I had to try it. The recipe was for a bundt cake but I don’t do bundt cakes and a two layer cake just seemed a little bit like to much work. After reading the recipe I decided to do adapt it for cupcakes. This was amazing. I could not believe that I was making icing and cake out of the same mix. I couldn’t wait to get them done and taste them. Just for the record, they taste really good. They are very moist and have a good flavor. Even though there is cream cheese in the mix and icing, it wasn’t over powering.
I would recommend even the most novice baker to try these! The really are easy and you can’t beat all-in-one!
Ingredients
- 6 oz. - cream cheese, softened
- 1 cup - butter or margarine, softened (2 sticks)
- 2 teaspoons - vanilla extract
- 1 - (2 lb.) pkg. Domino® Confectioners Sugar
- 2/3 cup - milk
- 4 - large eggs
- 2 1/2 cups - all-purpose flour
- 1 teaspoon - baking powder
- 1/2 teaspoon - salt
- 2/3 cup - water
Instructions
- In a large mixing bowl, beat cream cheese, butter and vanilla extract at medium speed until smooth. Add confectioners' sugar alternately with milk, beating 1-2 minutes or until blended. Remove 2 1/2 cups of frosting from bowl, placing into a plastic sealable bag, and set aside.
- With mixer at slow speed, add eggs to remaining frosting in mixing bowl. Beat until blended.
- In a separate bowl, combine flour, baking powder and salt.
- Add flour mixture to frosting mixture alternately with water and continue beating 1-2 minutes or until well blended.
- Line your cupcake pan with liners and fill each one with 1/3 cup of mix
- Bake for 18 to 20 minutes or until they are slightly golden brown on top.
- **Note** This is my adaption to the recipe, you may have to work with it to get it the way you want it.
- Place your reserved mixture into a medium sized bowl
- Add an extra 3 cups of powder sugar and 1/3 cup vegetable shortening.
- Mix until smooth and icing will stand at a peak.
