It is hard to believe that the girls go back to school soon. You know what that means, summer is almost over and soon it will be Fall. I don’t mind Fall, it is one of my favorite times of the year but I am having a hard time accepting that I have to let the flavors of summer go soon. I wanted to get some last great recipes out before the weather turned cooler and when goodcook.com sent me this amazing avocado slicer, I knew exactly what I wanted to do with it. What says summer more than Avocado, Mangoes, and Crabmeat? Nothing I tell you, nothing. This little avocado salad is sure to make your entire summer!

The kit came with an avocado slicer, citrus reamer and a citrus zester. I giggled a little because all three tools would work nicely with my recipe, score! The first thing I noticed is how well they were made. They had a good, heavy handle and were tough. I need those kinds of tools in this house because we can be a little rough with our kitchen tools. However, just because something is made well does not mean it works well. So lets take a look and see what I thought!

Citrus Reamer:

Omg, how I loved this tool! It is very heavy and I was able to really get all the juice out of my lime. I know I will be using this a lot. It also worked well with the orange I had to juice. I was able to hold it with one hand and ream the juice with the other. I put it to the test with my stand juicer and I feel this little tool got more juice out. Love it!

Citrus Zester:

I loved this too. I have a zester grater but I really liked this one because I could peel of long slices of zest in a few seconds. I did find that you needed to be careful how hard you pushed and dragged it down the orange. If you are not careful you will get the bitter white part. But after a few tries I was a pro and had enough zest for my recipe. The handle is also heavy on this and it fits nicely in your hand.

Avocado Slicer:

This was another great tool and I did like it. However, I found that if your avocado was to ripe it was hard to get nice even slices. My avocado was just a little mushy and I noticed that I couldn’t get a good slice. Which was okay for this recipe because I needed them cut up but if you were slicing avocadoes for salad I would make sure they were on the not so ripe side. You can’t see it in the picture but the other end of the handle has a little tool to help you get the pit out. This was very handy and worked well. I am always careful when I take the pit out because one time I popped out one of those suckers and it hit me in the eye. True story! The handle is really heavy and you can get all the avocado out of the skin with this tool. All in all I really liked it and I am sure I will use it alot. We love avocado here, so if you love avocadoes this is the perfect tool for you!

Avocado Mango and Crab Salad

Ingredients
  • 1 medium orange, zested
  • 1 lime, zested
  • 3 tablespoons fresh orange juice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon creme fraiche or mascarpone cheese
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ⅓ cup safflower oil
  • 1 pound fresh lump crabmeat, patted dry, cubed if large
  • 1 cup chopped radicchio or 1 cup chopped red Belgian endive
  • 4 green onions, chopped
  • 1 large avocado, halved, pitted, peeled, diced
  • One 1-pound mango, peeled, seeded, diced

Instructions
  1. For the salad: While the popovers bake, in a large bowl, combine the orange and lime zest, orange and lime juices, creme fraiche, salt and pepper. Gradually whisk in the oil. Add the crabmeat, radicchio, onions, avocado and mango. Toss until combined.
Serving Suggestions:
  1. Mine were served in popovers but you can serve it on a bed of lettuce, in a tomato, or as a sandwich. Garnish with lemon for an elegant presentation.
