I have always had a sincere love for Chocolate Chip Cookies. When I was young my Mom had our milk and butter delivered from a farm owned by friends. Every once in a while she would take the fresh butter and make chocolate chip cookies with it. When she got the first batch in the oven I would sneak in and take some of the cookie dough. I thought at the time I was real sneaky but later on in life I found out she knew that I was doing it. In fact, she admitted that she would always run off to do something so I could sneak it. Mom’s are pretty awesome!

When my girls were born I couldn’t wait to give them some of the memories I had as a child. When they were old enough to eat solid foods my Mom made them their first batch of chocolate chip cookies. I still remember both of their reactions. Roxy was more surprised than anything and Avery just chowed down like there was no tomorrow. I didn’t give them the raw dough because of the eggs but when they turned 5, that changed. They suddenly become the sneakers and I was the one that pretended I didn’t notice. To this day they wont eat store bought cookies unless they have to. Unfortunately for them I can’t make my Moms cookies but I can make these delicious One Bowl Chocolate Chip Cookies from I Can’t Believe It’s Not Butter.

You may have seen my other posts about I Can’t Believe It’s Not Butter and yeah, I will admit sometimes I sound like an infomercial but we really have been using it for years. I love the fact it is made with 70% less saturated fat and has 30% fewer calories than butter. I can feel good letting my kids eat the cookies. It seems now you have to watch every little thing you put in your mouth. Gone are the days where you could just enjoy food. When my Mom was making me cookies she let me sit on the counter and eat them while she was making them. She didn’t worry about calories, etc. She just enjoyed watching me enjoying this special treat. But I can’t do that with my girls. I have to keep them active and healthy. Thankfully there are products like this that help me and gives me the opportunity to make them special treats.

One Bowl Chocolate Chip Cookies

Ingredients
  • 1 cup (2 sticks) I Can’t Believe It’s Not Butter!® Cooking & Baking sticks
  • ¾ cup firmly packed light brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 package (12 oz.) semi-sweet chocolate chips
Instructions
  1. Preheat oven to 375 degrees
  2. Beat I Can’t Believe It’s Not Butter!® Cooking & Baking sticks with sugars in large bowl with electric mixer or wooden spoon until smooth. Beat in vanilla, egg and baking soda. Stir in flour until blended. Stir in chips.
  3. Drop mixture by heaping tablespoonfuls, 2 inches apart, on ungreased baking sheets. Bake 10 minutes or until edges are golden. Cool on cookie sheets 2 minutes. Remove cookies to wire racks and cool completely.
