I love my Keurig. So much so that I often wish I could just stick my head under it and let the coffee drain in. Want to know what I love more than my Keurig? Coffee, duh! I am a sucker for coffee and can’t function in the morning without it. One of my favorites is Gevalia Dark Royal Roast single serve cups. It is never bitter and brews awesome every single time. In fact it is my favorite to cook with when I am making my coffee infused specialities!

My family asks for my Coffee Infused French Toast with Blueberry compote quite often and it is so easy to make that I don’t mind. Thank god for single serve cups, they cut the time in half! We had it for brunch over the weekend and as usual, I was completely out of the ingredients so I needed to go pick some up. Hello, Walmart! I love shopping at Walmart and I knew I could find my Dark Royal Roast there and I was right! It was on the top shelf where it always is!

In addition to the coffee I needed eggs and bread. I love getting eggs at Walmart because you can get 5 dozen for a little over $7.00. Considering the amount of baking we do in this house, that is a steal. I also love their marketside french bread. It has a great crispy crust but the inside is soft. You can view my full shopping trip HERE. On Sunday morning it was time to get brunch ready! I assembled all my ingredients and donned my imaginary chef hat!

After about 20 minutes of frying I had beautiful, beautiful french toast! This was the only picture I could get before the family got antsy!

I couldn’t make my famouse french toast without making my killer White Chocolate Frappe. When I say killer, I mean killer. One sip and you will never go to Starbucks again, true story. I have people that come to my house just so I will make them coffee, how cool is that? It is also another easy recipe, with just a few ingredients and of course, Gevalia! Gevalia is never bitter, even though it is a dark roast. It brews perfect and if I am making something for someone I really don’t want to say “Ooops, let me make you another one, that coffee is bitter.” Talk about embarrassing!

Coffee Infused French Toast with Blueberry Compote

Coffee Infused French Toast with Blueberry Compote

Ingredients

  • Coffee Infused French Toast
  • 4 large eggs
  • 1 6 oz. cup of Gevalia Dark Royal Roast-Brewed
  • 2 tbsp. sugar
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 6 slices of French Bread
  • Blueberry Compote:
  • 2 cups- Fresh or Frozen Blueberries
  • 1/4 cup- Sugar
  • 1/4 cup- Lemon Juice
  • 3 tbsp.- Water

Instructions

    French Toast:
  1. Heat 2 tbsp. of butter in medium frying pan over medium heat.
  2. Whisk together eggs, coffee, sugar, vanilla, and cinnamon until frothy.
  3. Drop your bread into the egg bath and let sit for about 30 seconds on each side.
  4. Fry slices until they are golden brown on each side.
  5. Blueberry Compote
  6. In a small saucepan combine 1 cup of your blueberries, sugar, lemon juice and water. Cook for 10 minutes over medium heat, stirring occasionally.
  7. Add your other cup of blueberries and keep cooking for another 8 minutes. Stirring occasionally. Be gentle with your stirring, you do not want to break the blueberries down to much.
  8. Transfer to a bowl and let cool completely.
  9. Assembly
  10. Place 2 to 3 slices on a plate. Top with blueberries and sprinkle with powder sugar.

White Chocolate Caramel Frappe

Ingredients

  • 6 oz cup of Gevalia Dark Royal Roast-Brewed
  • 1/4 cup whipping cream
  • 1/4 cup White Chocolate Caramel Latte Creamer
  • Ice

Instructions

  1. Brew your coffee and pour into medium size bowl. Add your creamer and whisk until fully combined. This should cool off your coffee. In a blender place ice and whipping cream. Add in your coffee mixture and blend until all ice is crushed and mixture is thick. Pour into glass and add whip cream!
