I love the holidays, and I love cookies, namely these Cranberry Chocolate Chip Oatmeal cookies. They are chewy, crunchy and have an amazing texture. Dip them in white chocolate and you have an amazing little cookie on your plate.
Baking is a huge deal in this house at Christmas time. My Mom has always made a lot of goodies for us to eat and of course to share. Christmas is her favorite holiday and she goes all out for it. I feel blessed that my girls also get to experience Christmas the way I did as a child. I believe it is a magical time of the year and it seems like everything is a little brighter and a little happier.
If you look around the blog you wouldn’t guess I am not a baker, well from scratch anyway. I always found baking to be hard because everything has to be exact and I am more of a throw it in and see what happens kind of girl. But when I saw these cookies I knew I had to try them, from scratch. I was nervous as all get out, lol. But when they were done I let my Mom taste one and she was like “Hey, those are really good!” Score one for The Rebel Foodie, YAY!
I decided to dip them in white chocolate because it is my belief everything tastes good dipped in chocolate and I was completely right. Dipping them in chocolate brought them to a whole new level! Not just any chocolate though but my fave chocolate ever, Ghirardelli. They have these awesome new white chocolate melting wafers that are in a resealable bag and they are just, WOW. They can be microwaved, which is a god send for me and I get smooth results every single time. I can honestly say that Ghirardelli and I are going places this holiday season!
These cookies would be perfect for your holiday table or even gift giving! Just hide some for yourself because they will be gone in a flash.
I leave you with a foodie photo blooper. I was trying to get an interesting shot for this post and my cookies decided to make a break for it. One jumped to the table, the other nose dived in the milk. After I got over the shock I actually laughed because they were determined they were getting out of there, lol! So I decided to give them their 15 minutes of fame anyway!
- 1 c. butter, softened ( I used 2 sticks of unsalted butter)
- 1 c. firmly packed brown sugar
- ½ c. granulated sugar ( pure cane sugar or splenda)
- 1 large egg ( room temperature)
- 1 tbsp. vanilla extract ( i used pure vanilla, not imitation)
- 2 c. all purpose flour
- 1 tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. salt
- 1 c. sweetened dried cranberries
- 1 c. chocolate chips ( semi-sweet)
- 1½ c. pecan pieces, toasted
- 1⅓ c. old fashioned oats
- 4 oz. Ghirardelli White Chocolate melting wafers
- 3 tbsp. shortening
- Beat butter at medium speed with an electric mixer until creamy, gradually add sugars, beating well. Add egg and vanilla, continue beating until well blended. Combine flour and next 3 ingredients, gradually add to butter mixture and beat until well blended. Stir in cranberries, chocolate chips, pecans, and oats. Drop by teaspoonfuls 2 inches apart ( I used a cookie scooper) onto a lightly greased cookie sheet. Bake at 375 degrees for 9 minutes or until cookies are lightly browned. ( be careful because they will continue to cook after you remove them and they may get overly browned if baked to long). Cool on baking sheets for 2 minutes and then transfer to wire racks, cool completely.
- After cookies are cooled, melt your wafers with shortening in the microwave at 30 second intervals until completely smooth. Dip your cookie and let excess drain back into bowl. Place dipped cookies on wax paper and let stand until completely firm.

I’m baking these right now for my son’s 2nd grade Cranberry Day. I hope we don’t sample too many!! They look amazing before the white chocolate dip.
I had my 7yr old son help me mix them up with me so he could have ownership of them at school tomorrow. As he was adding the chocolate chips he says “Are you sure these are healthy mom?” Umm no they’re still cookies.
