When I was younger I remember when company would just pop in announced and kind of send my Mom into a tizzy. Especially if she hadn’t baked anything in a couple of days. That was when she would make Spoon Pie. If you have never had spoon pie, well you are really missing something. It is so good, especially when warm. It has a fudgey gooey center, like pie but the outside is crisp like cake. You spoon it out of the dish and it has all these nooks and crannies with gooey chocolate.

It only take about 30 minutes to make which is perfect because it gives you time to put on coffee, talk about the weather and such. By the time they begin to wonder about refreshments it is already on the table with coffee. Don’t forget the homemade whip cream, it makes it even better!

Ingredients
  • ½ cup of margarine
  • 1 oz square of bittersweet chocolate
  • 1 cup of sugar
  • ½ cup of all purpose flour
  • 1 tsp vanilla extract
  • 2 large eggs, beaten
  • Whip Cream:
  • 1 cup heavy whipping cream
  • 1 tsp. powdered sugar
Instructions
  1. Preheat your oven to 325 degrees
  2. In a small sauce pan over med-lo heat, melt your butter and chocolate, stirring occasionally
  3. Remove from the heat and add your sugar, flour, vanilla, and eggs. I do mine one at a time and give it a good stirring before adding the next ingredient.
  4. Grease a 8 inch square pan and pourbatter inside.
  5. Bake for 22 minutes ( do not overbake. It will appear slightly under done on top)
  6. Serve warm with homemade whip cream
  7. Homemade Whip Cream:
  8. Beat your whipping cream and powder sugar on medium speed until soft peaks form. Refrigerate any unused portion
