I had seen Goya in my grocery stores but had never really thought about trying it. I was interested when I saw a campaign on Sverve featuring Goya and thought it would be the perfect time to expand my horizon and try it. They sent me a lovely package with Quinoa, Olive Oil, a cookbook, Adobo seasoning, and some coupons. I felt like I had won the Goya lottery!
I already admitted I hadn’t tried Goya but another thing I had never tried was Quinoa. But here was a chance to try it at last and see what the hype was all about and check out a new brand. I really love being a blogger.
I actually prepared the Quinoa with my favorite chicken recipe, and I will admit I liked it. I rinsed it really good before cooking it. I thought how it opened up and had the little squiggles in it was neat. I can’t help it, little things like that capture my interest. Yes, I am also enamored with all things shiny, glittery, and pink. That is just how I roll.
I was also super impressed with Goya too. The Adobo seasoning is now a new family favorite and I find myself using it on just about everything I can think of. I am really, really picky about my Olive Oil. I can’t count how many times I have heard friends say ” Oh, I get mine from the Dollar Tree.” I am not knocking the Dollar Tree or anyone that purchases from there, because I shop there all the time. But when it comes to olive oil, that can give me heart failure. So I was a little hesitant about using the olive oil but I am pleased to say it tasted great with a rich, deep flavor. It didn’t smoke at a high heat and really brought the flavor out of a couple of the dishes I tried it in. Even my Mom was super impressed and she doesn’t really like olive oil. ( That gives me heart failure too.)

Ingredients
- Uncooked Quinoa - 1 Cup
- Onion, cut into fourths and then sliced - Small
- Chopped Green Bell Pepper - 1 Small
- Mushrooms, Sliced - 1 Cup
- Dried Thyme Leaves - 1/4 tsp.
- Salt - 1/4 tsp.
- Vegetable or Chicken broth - 14 oz. Can
Instructions
- Rinse Quinoa thoroughly by placing in a fine-mesh strainer and holding under cold running water until water runs clear; drain well.
- In 2-quart saucepan, heat oil over medium heat. Cook Quinoa and onion in oil 4 to 5 minutes, stirring occasionally, until light brown.
- Stir in remaining ingredients. Heat to boiling; reduce heat. Cover; simmer about 15 minutes or until liquid is absorbed. Fluff with fork.
