Green Beans

I remember the first time I had Green Bean Casserole. It was at my Grandmothers house and I remember thinking “Wow, this is pretty good.” My Grandmother always had Thanksgiving at her house and most years it never deviated from the traditional menu. It was always Turkey, Sweet Potatoes, Mashed Potatoes w/ Gravy, Stuffing and Pumpkin Pie. Then one year she told us she wanted to try something different that she had found in a magazine. We were a little leery because it is Thanksgiving, you don’t mess with Thanksgiving.

On the table was a casserole dish ( some of my older readers might remember them, they where green with white flowers from faberware) and some kind of green been concoction with these fried onion things on top. Sorry for the not so correct description but I was only around 15 at the time and that is exactly how I saw it. The rest of the family wasn’t as interested in trying it but I was more adventurous than they were, so I decided “What the heck, I will try it.” I guess even then I was an emerging food diva. I tried and was amazed that it was really good. It was simple only using cream of mushroom soup, green beans, fried onions and seasonings but it was one of those dishes you don’t forget and creates a food memory.

Sadly my Grandmother passed away in 96 and I still miss her. Every year at Thanksgiving we make that casserole in honor of her. It has changed a little over the years. We use Cream of Chicken soup now and I have added a foodie flare to it, but not so much that we don’t think of her every time we have it.

Now that I have my own girls I am looking to make memories for them also. Most years I am running around the internet trying to find new holiday dishes, searching for that one that will be THE memory for them when I am gone. I love Sam’s Clubs Show Your Best Side because it has a range of different dishes but also shows you how to use the leftovers. And who doesn’t have leftovers at Thanksgiving? We have a lot and I am sick of turkey sandwiches, lol.

One of the ones I found sound really good and right up our taste alley. It uses brown sugar and our favorite thing ever, Bacon. Who doesn’t love bacon? I have included the recipe below for you and hope you will try it.

Brown Sugar Bacon Green Beans

Ingredients
  • 6 slices bacon or turkey bacon
  • 2 cans (14.5 oz. each) Del Monte® Cut Green Beans, well-drained
  • 2 Tbsp. packed dark brown sugar
  • ¼ tsp. dried red pepper flakes
  • 1 Tbsp. canola oil (optional)
Instructions
  1. Cook bacon in a large skillet over medium-high heat about 5 minutes or until crisp. Place bacon on paper towels. Discard all but 1 tablespoon of the bacon drippings. (If using turkey bacon, replace drippings with 1 tablespoon canola oil.)
  2. Return skillet to medium-high heat; add beans, sugar and pepper flakes. Cook 6 to 7 minutes or until lightly browned, stirring occasionally.
