Homemade Chicken Fingers

 

My girls ask for my Homemade Chicken fingers more than Chicken Nuggets from fast food places and let me tell you, that really warms my heart. They are quite simple to make and they are oven baked but have a crispy coating. This is not what I consider low fat but they are better than store bought or fast food bought.

I have adapted this recipe but can’t quite remember where. My mom owns hundreds of cookbooks ( no, that is not an exaggeration.) and it was from one of them.

Homemade Chicken Fingers

Ingredients

  • 2lbs of chicken tenders, fresh. ( i stock up on these while they are on sale. Sometimes I can get them for as little as 2.98 a pack)
  • 2 eggs beaten
  • 2 packets of Hidden Valley Ranch dressing mix
  • 1 cup of flour
  • 1 box of Corn Flake crumbs ( you can also make these using regular corn flakes and a rolling pin. I buy the off brand, tastes just same)
  • 1/8 tsp of pepper
  • 1/2 tsp of salt.
  • a dash of red pepper flakes ( optional )
  • A stick of butter

Instructions

  1. Heat your oven to 425 degrees.
  2. Melt your butter in a microwave safe dish or large glass measuring cup. Pour half in your pan and using a paper towel coat the whole pan with it.
  3. Combine your flour, dressing mix,pepper, red pepper flakes, and salt in shallow pan. Beat your eggs and put them in a smaller shallow pan and in another shallow pan put your corn flake crumbs. Rinse of your chicken tenders and dry them on paper towels removing as much of the moisture as you can. Pick up a tender and dredge through your flour mixture, then your egg ( remove the excess egg) and then your corn flake mixture.
  4. Place them in your pan but make sure that are not right against each other, leave a little room. Take the remaining butter and drizzle it over each tender. Bake in your oven for 20 minutes or until the outside is crispy and then inside is done. Take them out of the oven and let them cool just a bit so they do not stick to the bottom of the pan. Serve with a sauce of choice ( i have some below ). I usually add a salad or a veggie to the side.

Sauces for Chicken Tenders.

Homemade Honey Mustard Sauce (source All Recipes )

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons prepared yellow mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 1/2 tablespoon lemon juice

Directions

  1. Mix the mayonnaise, yellow mustard, Dijon mustard, honey, and lemon juice together in a bowl. Cover and chill in refrigerator overnight.

Pineapple BBQ Sauce ( source: BBQ Recipes )

Ingredients:

  • 1/2 lg Onion, minced
  • 1/2 c crushed pineapple
  • 4 Cloves Garlic, minced
  • 2 c Catsup
  • 1/3 c Vinegar
  • 1/4 c Worcestershire Sauce
  • 1/2 c Brown Sugar, packed
  • 3/4 c Molasses
  • 1/2 ts Black Pepper
  • 1/2 tb Salt
  • 1/4 c Tomato Paste
  • 2 tb Liquid Smoke
  • 1/3 ts Tabasco

Directions:
Combine onion and garlic, in a 3-quart saucepan. Saute’ until onion and garlic are translucent, approximately 10 minutes. Add all remaining ingredients. Bring to a boil, then turn down to a medium simmer. Simmer 20 minutes, stirring constantly. Run sauce through a medium strainer to remove onion and garlic bits if you prefer a smoother sauce. Cool and enjoy.

Homemade Blue Cheese Dressing ( my favorite dipping sauce!! Source- All Recipes)

Ingredients

  • 6 oz. blue cheese, crumbled
  • 1 small onion, peeled and diced
  • 2 cloves garlic, peeled
  • 1 cup mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup olive oil
  • 1/4 cup Rhine wine
  • 2 tbsp. Bragg’s Organic Apple Cider Vinegar
  • 1/2 tsp. paprika
  • 1/2 tsp. poppy seeds
  • 1/2 tsp. salt
  • 1/2 tsp. Dijon mustard
  • 1/8 tsp. cayenne pepper (or, to taste)

Directions

Blend all ingredients (except blue cheese) in a blender until smooth. Stir in the crumbled blue cheese and mix well.

Refrigerate for 30-60 minutes before serving. Use on salads, in casseroles, as a dip with chips, vegetables or torillas, as a dressing on sandwiches or anywhere you might use Ranch dressing.
