Make Something Yummy From The Dollar General Holiday Baking Section

Scotchies4 It is baking time here at The Rebel Foodie and I couldn’t be more excited. In case you haven’t noticed I love the holidays and making all the wonderful goodies you only get once a year. Unfortunately money is really tight and I need to save it everywhere I can. That is why I am so happy that Dollar General Store has all my baking needs for less than all the other stores. We truly do have a Dollar General Holiday here!

I know some of you are going through tough times too. So I made up two recipes for you that you can make using products found at Dollar General. Each recipe cost just under 10.00 to make and makes quite a bit. So you will have some for you and some to give away! How cool is that?

The Dollar General has a lot of baking items to choose from and most are in name brand but they also have their own brand that is usually much cheaper. And, guess what? It is as good, and sometimes better, than the name brand! 2013-11-30 18.46.43

The first recipe is for Peanut Butter Rice Krispies with Chocolate and Butterscotch Ganache!

What you will need:

3 cups of Rice Krispies

1/2 cup of Clover Valley Granulated Sugar

1/2 cup of Clover Valley Light Corn Syrup

1 tbsp butter

1/2 cup of creamy peanut butter ( Jif is sold at Dollar General)

1/2 cup of butterscotch chips

1/2 cups of milk chocolate chips

1/3 cup of whipping cream ( may not be available if your dollar general does not have a refrigerated section) Directions- Butter a 9 by 13 baking dish and set aside. In a large bowl add your rice krispies

In a medium saucepan, boil your light corn syrup, sugar and butter. When it starts boiling add your crunchy peanut butter. Please be careful because boiled sugar makes a nasty burn.

Pour the mixture over the rice krispies and then pour them into the buttered baking dish. Using a rubber spatula press them down until they are packed firm. Set aside.

Add your chips ( both chocolate and butterscotch) to a medium pan and melt slowly over lo heat until thoroughly melted. Add your whipping cream and mix well. Pour this mixture over your rice krispie mixture and smooth out.

Let the mixture set and when the ganache is firm flip the baking dish onto wax paper. Using a sharp knife cut the rice krispies into squares. Serve 18 to 24 depending on how big you cut the squares. Total cost- 8.37 cents 2013-11-30 18.47.50 I realize that not everyone has time for or wants to make something completely from scratch. That’s okay because Dollar General ( and me) has all of you semi-homemade bakers covered. And, the best part is you can get your kids to help with this recipe. Sometimes I want to make cupcakes but don’t have the time to make them from scratch. Sometimes I don’t even have time to decorate them! So I head to Dollar General and pick up a box of cake mix, some sprinkles or decorations and then make homemade icing. But if you don’t want to make homemade icing, they have can icing too! 2013-11-30 18.48.30 2013-11-30 18.46.40

I wanted to make some Christmas cupcakes to get us in the mood for the holidays! So, when I did my shopping at the store I picked up a box of cake mix and some cute little decorations. I was so excited to see sprinkles for $1.60 and Christmas candy decos for $2.75. Then I picked up some powdered sugar, shortening ( shown above) and peppermint extract to make my Peppermint Butter Cream. The I grabbed a slave err, my child and put them to work swirling and decorating! IMG_4552

And in the end we had this ( and they look pretty good if I say so myself! PeppermintButtercream What you will need:

1/2 cup of solid vegetable shortening

1/2 cup of unsalted butter

2 teaspoons of peppermint extract

4 cups of sifted powder sugar

2 tbsp of milk

In a large mixing bowl cream the shortening and butter together until light and fluffy. Add in peppermint extract, 2 cups of the sugar and 1 tbsp. of milk. Beat on medium speed until thoroughly mixed ( icing may be dry and crumbly, this is fine.)

Add in the other 2 cups of sugar and 1 tbsp of milk. Beat one medium-high speed until smooth. Add in additional milk if needed for smoother consistency.

Fit a piping bag with a star tip and fill bag with icing ( only half way) and swirl icing on each cupcake. Then decorate as you like.
