There is something comforting about a good bowl of sausage and cheddar cheese soup in the Fall. It warms your bones and this quick, easy recipe makes it a cinch to prepare! I headed out to Safeway and got some Hillshire Farm sausage for my recipe because you all know I love my Safeway! I was pleasantly surprised to find they were having a buy 3 save 3 if you were signed up for the Just For You program, which of course I am because I love saving money. I was excited to be able to mix and match my favorite Hillshire Farm’s products and save $3.00, meaning I was getting 3 meals out of it and saving money to boot. How could you not love that?

This soup starts out with a can but incorporates homemade flavors that makes it easy to prepare and taste amazing. You can also add beer if you like but I decided to keep it PG rated for the blog. With the buy 3 save 3 I was able to get sausage for my soup, lunchmeat for sandwiches to eat with the leftovers and Hillshire Gourmet Creations Chicken Apple with Gouda for another dinner. So I saved $3.oo and got 3 meals, you can’t beat that. I will be heading back this week because the special only lasts until October 19th 2013.

Sausage and Cheddar Cheese Soup:

Ingredients:

1 package of Hillshire Farms Angus Beef Smoked Sausage

3 tbsp. of unsalted butter

2 cups of half and half

(optional- 1 can of beer )

1 can of Cambells Cheddar Cheese Soup

1 1/2 cup of grated extra sharp cheddar cheese

salt and pepper to taste

Instructions:

Step 1:

Cut up your sausage into bite size pieces and in a non stick skillet, fry until browned and cooked. Set aside.

Step 2:

In a medium size pan, over low heat, melt your butter and when it is completely melted, slowly add your half and half. Make sure you do this slowly so the half and half doesn’t curdle. ( if you want to make this with beer, cut the half and half to one cup and use one can of beer in place of the second cup of half and half)

Step 3:

Add in your salt and pepper. Increase the heat to medium low and add in your cheddar cheese soup and whisk vigorously until the soup is smooth. Let it heat, while constantly whisking until it is hot. Add in your shredded cheddar cheese.

Step 4:

Continue whisking until the shredded cheese is melted completely and the soup is smooth. Taste test and add more salt and pepper if needed. Reduce the heat to low and add your sausage. Heat thoroughly, stirring constantly.

Serve immediately in soup bowls. I serve mine with bagel crisps because they taste good with the soup. Also, it makes it like a dip and soup combo! Like this recipe? Don’t forget to pin it!
