Special Homeschool Lunch with Kraft Fresh Take

If you have been reading my blog for a long time then you most likely read the post “When Your Life Falls Apart.” In that post I talked about my younger daughter, Avery, and her bullying experience when a girl actually pulled a knife on her in the bathroom and threatened to kill her. Shortly after that incident I became a homeschool Mom. It has been really tough for me and for Avery. Me because it is a responsibility I wasn’t prepared for and for Avery because she feels she is the one being punished in this situation. Needless to say, it has not been the greatest around here as far as that is concerned.

I know Avery has been feeling kind of low lately so I wanted to prepare her something special for lunch. Well, anything is better than school lunches, but I wanted something super special. I headed to Walmart to buy the ingredients for one of Avery’s favorite meals, Catfish stuffed with Crab Imperial. While I was there I noticed that Kraft has these awesome new products called Kraft Fresh Take. While checking them out, I decided that the Parmesan would be perfect on the fish and the Rosemary and Garlic would be great on the Zucchini and Squash medley I found in the frozen food section. It was a quick shopping trip that day because I was in a little bit of a hurry and thanks to Walmart and Kraft, I was in and out in under 30 minutes. Wonderful! I got home and proceeded to thaw out the Fish and Veggies for our lunch. While that was happening, I assembled my ingredients for the recipe. We did a couple hours of homeschooling and before you know it everything was thawed and ready to go. I opened the Kraft Fresh Take and was thrilled to see everything was in one bag. The directions were super simple. Shake so the cheese and bread crumbs mix together, and add your chicken, fish, or pork and shake. You can’t get any easier than that.

Making the Catfish stuffed with Crab Imperial with Kraft Fresh Take was really easy. I put the fish in the bag, shook it real good ( hello exercise!), laid it in my pan, topped with the crab imperial, and then folded it, securing with a tooth pick. Really, how easy is that?

The veggies were also super easy and quick. I dumped them in a bowl, dumped the whole bag of Rosemary and Garlic fresh take, drizzled with olive oil, mixed it and then popped them in the oven to roast along side the fish.

Avery was so excited about her special lunch. It only took about 45 minutes to make and the time I got to spend just talking to her and enjoying a meal one on one, was worth every minute. Plus I was able to do it at home and not spend a fortune going to a restaurant. Seeing her smiling face just made my day! I definitely took the days coolest Mom award!

I can’t make the situation go away or make everything that has happened go away but thanks to one special lunch, I made it a lot better. Avery was really happy with her lunch and for once her 13 year old brain didn’t mind being with her old Mom! SCORE!

Catfish stuffed with Crab Imperial

Ingredients

  • 1 lb. Catfish
  • 1 package of Italian Parmesan Kraft Fresh Take
  • 1 package of Rosemary and Garlic Kraft Fresh Take
  • 1 package of Frozen Squash and Zucchini medley
  • 1/2 cup mayonnaise
  • 1 tsp. sugar
  • 1 tsp. seafood season ( found in the seafood department of your grocery, your choice)
  • 1 tsp. finely chopped parsely
  • 1 large egg beaten lightly
  • 1 tsp. lemon juice
  • 1 lb lump crabmeat

Instructions

  1. Pre-heat over 350 degrees.
  2. Step 1
  3. Prepare your Crab imperial by mixing the mayo, sugar, seafood seasoning, parsley, egg, and lemon juice together. Gently fold in your crab. Set aside.
  4. Step 2
  5. Wash your fish fillets under cold water and dry in paper towels. Line your pan with alumiminum foil and brush with olive oil.
  6. Open your Italian Parmesan fresh take bag and coat the fish piece by piece and place in the pan. Top fish with the crab imperial and fold, securing with toothpick.
  7. Step 3
  8. Line your baking sheet with aluminum foil.Place your medley in a bowl and open your Rosemary and Garlic fresh take bag. Dump it out on top of the veggies and drizzle with olive oil. Spread the mixture out on your baking sheet.
  9. Place the pans in the oven and bake 30 minutes or until fish is flaky and crab imperial is cooked through and veggies are roasted. Serve immediately.

    I’m really glad these recipes perked Avery up…she deserves it after what she went through. The menus look excellent and so quick to put together. :-)
