I like to think of myself as the Paula Deen of blogging, except without all the controversy. I don’t really do healthy. I believe you can eat what you want in moderation. I usually pass the organic section right up. I mean, I have been eating from the “other” fruits and veggies section for 39 years and I am still alive, right? So when I had an opportunity to review organic products from Shiloh Farms I didn’t immediately jump on it. Was it something I wanted to try? Did I want to direct my readers to a product I may not necessarily believe in? Was it going to change me into an organic eater? See, reviewing products isn’t as fun as everyone thinks it is, lol.
After a lot of thought and looking over their website I decided to give it a try, just to see what organic really is and how much different it was from the “other” products. But first I needed to school myself in organic eating and what protocols were required to be called an organic product. After some research I found this site HERE and it explained a lot. After doing some research I decided I was ready to try a couple of the products that were sent to me. I received:
- Dry Garbanzo Beans
- Dry Kidney Beans

- Cranberries

- Coconut Flour
- Coconut Sugar

- Red Quinoa
- Brown Flax Seeds
- Sesame Seeds
I decided to use the Walnuts and Cranberries first because they are really familiar to me. I make spice cake a lot and wanted to do an upside down cake with it. So I thought it was a perfect way to incorporate the walnuts and cranberries. There wasn’t much difference in taste, I will admit. But for some reason it felt good to eat because I was putting something good in my body that was free of all those “unnecessary” things. I was even more excited to find out that they worked perfectly in the cake, it was yummy!

Ingredients
- 1 box of Spice Cake Mix ( your choice, I used Duncan Hines)
- 1/4 cup of butter
- 1 cup brown sugar
- 1 cup of Shiloh Farms Organic cranberries
- 1 cup of Shiloh Farms Organic walnuts, chopped
Instructions
- Heat oven to 350 degrees. If you want plump cranberries soak them in water for 2 to 3 hours, then drain. Reserve your juice if you like.
- Mix your cake mix according to the directions on the box.
- Spray your pan with cooking spray or bakers joy.
- Melt your butter and our into prepared pan, making sure to coat the bottom evenly.
- Sprinkly your brown sugar over your butter and using the back of a spoon push it down to form a crust.
- Sprinkle your walnuts on top.
- Sprinkle your cranberries.
- Pour your cake mix over top.
- Bake for 42 minutes or until a toothpick inserted comes out clean.
- Immediately run knife around side of pan to loosen cake. Place heatproof serving plate upside down onto pan; turn plate and pan over. Leave pan over cake 5 minutes so brown sugar topping can drizzle over cake; remove pan. Cool 30 minutes. Serve warm or cool. Store covered in refrigerator.
