If you are a busy Mom you know it is almost impossible to get your kids to eat a nutritious breakfast in the morning. Most of the time mine want money to get a donut at school and since Roxy is high school age she is all about the coffee. I sometimes have to fight them to get them to eat and I try to make it as fun as possible. That is how the You’re A Star Canadian Bacon, Egg, and Cheese Muffin Cups were born. It is so easy to make, and the little star toast topper makes it fun!
If your family does not like scrambled eggs you can just break one egg into each muffin cup. You can even leave them a little sunny side up so the toast star can act as a dipper. You can add mushrooms, onions, green peppers, almost anything you like. If you want a grown up version might I suggest adding a little spicy brown mustard and swiss cheese. I know it doesn’t sound good but trust me it really is!
You can get extra fancy and serve them on top of grits or a biscuit. No matter how you decide to serve them I know your family will love them!
Ingredients
- A few slices of Canadian Bacon, cut into strips
- 3 eggs
- 3 tbsp. milk
- Salt and Pepper to taste
- Shredded Cheddar Cheese
Instructions
- Pre-heat oven to 375 degrees
- Grease each muffin cup with cooking spray
- Line each muffin cup with a strip of Canadian Bacon, making sure it sticks to the sides really good to prevent falling when in the oven.
- In small bowl whisk eggs with milk, add salt and pepper to taste.
- Top each muffin cup with cheese ( cheese will sink, that is okay)
- Bake for 18 to 20 minutes or until cheese is melted and when toothpick is inserted it comes out clean.
- Toast bread in toaster
- Use a star shaped cookie cutter and cut out the middle of each piece of toast
- Stick toast star in the top of the muffin cup, like mine is in the picture

You had me at bacon! That combination looks too delish. I wish we had time in the am to eat something like this but it’s hectic. Maybe we’ll try it on the weekend.

It looks so pretty I don’t think I could get myself to eat it!! Although, it does look finger-licking GOOD!! I might trade the Canadian bacon for real bacon…yumms!
