I Shot Cupid Cupcakes

I am Anti-Valentines Day. There I said it; I am officially out of the Valentine’s Day heart. You are probably thinking to yourself “Of course you are, it’s because you are old and single Bobbie.” No, it is because I show everyone how much I love them all year long. I really do feel that Valentine’s Day is just over commercialized and 8 times out of 10 leads to someone being hurt. You buy flowers (that die), Chocolate (that goes to your thighs), and say “I Love you.”(That you may or may not mean) on one day of the year because someone tells you too? That just sounds a little to contrive for me. I will admit that I did start at least trying to celebrate Valentine’s Day when the girls were born. I bought them little stuffed animals, candy, and a card. The candy ended up on their face, the little animals were forgotten the next day, and who knows where the cards went. Being a single Mom and money being very tight I would end up more frustrated than loving. I would tell them I loved them and they would get that glazed look that says “Yeah Mommy, you said that yesterday and the day before, we know already.” So over the years Valentine’s Day has been a little sparse around here.

So you may ask what do I do on Valentine’s Day? Well I still buy little things for the girls, but only little things. This year we are celebrating my Mom and Dad’s 50th wedding anniversary (Go Mom and Dad!) and I will be having my annual Anti-Valentine’s Day celebration. This year I am honored to have some very important guests, My “I Shot Cupid Cupcakes” and Old World Gourmet Drink Mixers.

Valentine’s Day is a day of chocolate, right? So what better way to be Anti-Valentine’s than with sinfully rich Chocolate Cupcakes Filled with Grand Marnier Buttercream and topped with Chocolate Ganache and Coco-Tini’s? I really can’t think of a better way unless someone knows how to gift me Johnny Depp. If someone gifted me Johnny Depp on Valentine’s Day I would sing it’s praises for the rest of my life. However, since that is not going to happen I am sticking with my original plan!

Old World Gourmet makes it so easy to make cocktails for any party. You just add your alcohol of choice and Old World Gourmet does the rest. Coco-tini is part of Old World Gourmet’s Bitch Bags collection. I received Dirty Bitch, Mojito Bitch, and Bitchy Blueberry Pomegranate. I honestly felt the Dirty “Bleep” fit better with my little celebration since it was chocolate. However, I did try the Mojito and oh my it was lovely. I definitely, definitely recommend it for your next summer party! It is very light and refreshing, perfect for a hot day. It is so easy just put it in the freezer for a few hours and “bam!” mixed drinks for a crowd.

Of course no anti-valentines day is complete without cupcakes and they have to be adult cupcakes! One of my favorite recipes for adult style cupcakes is a chocolate devils food cupcake with Grand Marnier piped in and topped with a dark chocolate 60% bittersweet ganache! Yum!

I Shot Cupid Cupcakes Recipe

I Shot Cupid Cupcakes Recipe

  • 3/4 cup boiling water
  • 3/4 cup cocoa powder
  • 6 ounces butter
  • 2 cups sugar
  • 1 teaspoon fine salt
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 2 1/2 cups cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • Grand Marnier Buttercream:
  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter or margarine, softened
  • 3/4 cup cocoa or three 1 oz. unsweetened chocolate squares, melted
  • 3 teaspoons of Grand Marnier Liquor or if you do not like alcohol 2 teaspoons of orange flavoring ( not juice! unless you want curdled icing!)
  • 4 cups sifted confectioners' sugar (approximately 1 lb.)
  • Ganache:
  • 12 ounces chocolate, chopped into small pieces
  • 1 cup heavy cream

  1. Preheat the oven to 350 degrees F.
  2. Whisk together boiling water and cocoa. Cover and set aside.
  3. With a mixer, cream together the butter, sugar, salt and vanilla extract.
  4. Add the eggs, 1 at a time, and continue creaming until light and fluffy.
  5. Sift together the flour, baking soda and baking powder and add this mixture, alternately with the buttermilk.
  6. Add cocoa and water mixture and mix until thoroughly combined.
  7. Scoop into cupcake pans and bake for 20 to 25 minutes.
  8. Let cool completely before continuing!
  9. Grand Marnier Buttercream Filling
  10. In large bowl, cream shortening and butter with electric mixer.
  11. Add cocoa and Grand Marnier or Orange Flavor
  12. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often.
  13. When all sugar has been mixed in, icing will appear dry.
  14. Add 3-4 tablespoons light corn syrup or water. Continue to beat until desired consistency.
  15. Using a decorator bag and tip, fill each cupcake with the buttercream taking care not to fill it to much or your cupcake will explode. When you have all the cupcakes filled go back and with a spoon press down gently on the top of the cupcake to remove any over flows. They will show through your ganache and your cupcake wont be very pretty.
  16. Ganache Instructions:
  17. Place chocolate pieces in a large bowl.
  18. Heat heavy cream on medium high until it comes to a boil. Remove from heat and immediately pour cream over chocolate and stir until completely mixed and glossy.
  19. Allow ganache to cool just a bit and then dip the cupcake in the ganache, making sure to coat good.
  20. Using a flat spatula smooth out your ganache. You can add decorations if you like!
