I admit it, I am not a pumpkin fan. I know, it’s shameful. Pumpkin is a fall tradition and I just don’t like it. So when Nana Helen said she was going to make Pumpkin Spice Mousse, well lets just say my face wasn’t jumping for joy!

Nana Helen usually bakes from scratch but she loved this recipe and really wanted to try it. After spooning it into little serving dishes she let me have a taste. Wow! I liked it even though I am not pumpkin fan. It was like pumpkin heaven on a spoon.

Also, it was super quick to make and would be a great dessert for company or when a girlfriend shows up for lunch!

Pumpkin Spice Mousse

Prep Time: 10 minutes

Ingredients

  • 1 package Pumpkin Spice Jello Pudding
  • 1 c. cold milk
  • 1 c. thawed cool whip
  • 1 tsp. melted butter
  • 1/4 pecan pieces
  • 2 tbsp. brown sugar

Instructions

  1. Beat cold milk with pudding mix for two minutes. Stir in cool whip.
  2. Spoon into 4 dessert dishes. Refrigerate until ready to serve.
  3. Mix melted butter, pecans, and brown sugar together. Sprinkle over desserts before serving.
