Author:
Recipe type: Appetizer
Ingredients
  • 20 pieces of bacon, cut lengthwise in half.
  • 2 lbs of shrimp, thawed if needed. ( use fresh shrimp. Already cooked shrimp will dry out)
  • 1½ cups of honey
  • ½ cup of Saucy Mama’s hatch chili mustard ( or any type of chili mustard)
  • ½ cup spicy brown mustard
  • ¼ teaspoon of red pepper flakes
Instructions
  1. Preheat oven to 350 degrees.
  2. On a cookie sheet covered in aluminum foil, place your bacon in a single layer. Bake for about 9 to 10 minutes. Drain your bacon on paper towels.
  3. Drain your bacon drippings from the pan and then using a brush, brush a thin layer of the bacon drippings on your foil. You just want it coated so don’t over do it.
  4. Wrap the bacon around the center of your shrimp. Lay it in your pan and do the same for the remaining shrimp. You want them in a single layer and do not crowd your pan. Use a second pan if needed.
  5. Bake about 12 to 14 minutes or until shrimp is pink in color and bacon is crispy.
  6. While your shrimp is cooking heat your honey in a small sauce pan on the stove. Add in your mustards and red pepper flakes. Let it come to a boil and then cut the heat down to a simmer. Let it simmer for about 5 minutes. Remove from the heat.
  7. Take your shrimp out of the oven and brush each one with your sauce. Remove to the oven and bake for another 2 minutes. Remove from oven, let it settle for about 5 minutes and then transfer to an appetizer platter. Pour remaining sauce over them and then garnish with red pepper flakes if you want.
Bonus Recipe
  1. Take about a pound of bacon and lay slices in a cookie sheet wrapped in aluminum foil. Make your honey mustard glaze and then brush it on to each piece evenly. Sprinkle with more red pepper flakes if desired. Place pan in oven that has been preheated to 350 degrees. Cook bacon for about 10 to 12 minutes or until crispy. Remove the bacon from the oven, drain on paper towels and allow to cool. Chop up the bacon into “bacon bits” . Store in an air tight container. These are amazing on pizza, potatoes or any thing you want to add some zesty bacon flavor too!

Ohh, I love bacon-wrapped anything. My favorites to use are scallops and use a sweet chili glaze. Will definitely try this mustard version with shrimp. Thanks for sharing.
