Tuna and Rice Cups Made Easy with Minute Rice

Sometimes I really don’t feel like cooking a big meal. I work a lot and I am one tired little person. But unfortunately my kids have this idea that I am supposed to feed them. Where they got it from I am not sure but you can be sure that when 5 PM rolls around someone will start screaming for food. I love muffin cup recipes. For one thing they are super easy to make. Secondly they are the perfect portion size. Thirdly you save money because you don’t need to buy a whole lot of ingredients for them. A little bit will go a long way!

I am not joking when I say super easy. Most of them use on 1 bowl and less than 7 ingredients. You measure, dump, and stir. Plus the combinations are endless and you can mix and match recipes. This recipe can be made with chicken or salmon if you like.

You can even make them vegetarian.

I also love the portion size because each cup equals one serving. So I can make three cups ( one for each of us ) and I know we are not getting two or three servings in one plate. I know we are getting the minimum calories without having to measure and weigh everything.

Because really, who has time for that?

When I am doing a muffin cup recipe I know I won’t need a lot of ingredients or a lot of one ingredient. This recipe used 1 small onion, 3 stalks of celery, and other staple ingredients. When I go to the store I know that I won’t have to buy a huge stalk of celery or a whole bag of onions. So not only does it save me time, it saves me money because I don’t buy stuff that will go to waste.

Did I mention I was broke? I don’t have the money to let food go to waste and I am sure you don’t either.

I really like Minute Rice because it cooks up beautifully. I have tried other rice, including store brand, and really nothing gives you the fluffyness like Minute Rice does. I love how I can just throw some in boiling water and 5 minutes I have beautiful, fluffy, and fully cooked rice. It is definitely a time saver and you can also save money when you are making recipes like my muffin cups!

Tuna and Rice Cups with Tangy Butter Sauce

Cook Time: 15 minutes

Ingredients

  • 2 c. cooked rice
  • 1 c. shredded Cheddar cheese (plus some for topping)
  • 1 can (6 1/2 oz.) tuna, drained and flaked
  • 1 small onion diced
  • 1 cup celery
  • 2 eggs, beaten
  • 2 tbsp. milk
  • Salt and Pepper to taste
  • Tangy Butter Sauce:
  • 1/4 c. melted butter
  • 1 tbsp. lemon juice
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. parsley flakes

Instructions

  1. Preheat oven to 375 degrees
  2. In a small bowl whisk your eggs and milk together. Set aside. Dice your onion and celery ( If you want them soft I would suggest sauteing them a little)
  3. In medium size bowl dump your tuna ( drained ), cheese, onions, rice and celery.
  4. Add your egg mixture
  5. Mix thoroughly.
  6. Salt and Pepper to taste.
  7. Spoon mixtures into each muffin section. I filled mine about halfway.
  8. Top with cheese
  9. Bake for 15 minutes or until cheese is bubbly and brown.
  10. Tangy Butter Sauce
  11. Mix all ingredients and pour over rice and tuna cups.
  12. Serve immediately
