
This is actually a cake my Grandmother baked all the time, especially if there was company coming. She said it was so easy to make and everyone seemed to like it, so it became a staple. I remember sitting at my little table at her house and having a piece with a cold glass of milk. She would often sit near by and talk to me as she did house work. It is one of my fondest memories with her.
One day I decided to turn the recipe into cupcakes because, well, everything is better as a cupcake. I love having one in the morning with my coffee and the girls love having theirs with milk. They are definitely a sweet beginning to your day!
Ingredients
- CAKE
- 1 1/2 c. Bisquick baking mix
- 1 egg
- 2 tbsp. shortening
- 1/2 c. sugar
- 1 tsp. vanilla
- BROILED TOPPING:
- 1/2 c. flaked coconut
- 1/4 c. chopped nuts
- 2 tbsp. milk
- 1/3 c. brown sugar
- 3 tbsp. butter
Instructions
- Heat oven to 350 degrees.
- Grease and flour large 12 cupcake pan.
- Mix or beat, by hand or mixer, all ingredients, except topping, for 3 to 4 minutes.
- Pour 1/3 c. of batter into each cupcake section.
- Bake 22 minutes or until toothpick comes out clean.
- Spoon topping on to each cupcake and stick under the broiler for 2 to 3 minutes, until golden brown.
- Remove from oven
- Let cool about 10 minutes.
- Remove from pan and serve.
- Store left overs in air tight container.

Hi, thank so much for sharing this cupcake recipe. Can you substitute the shortening for something else? I do not have shortening in the house right now, but I am looking forward to trying these. If it call for the shortening then I will go out & buy it. Thanks.

I have used Vegetable oil several times and they turned out just as perfect. Since the batter is more batter instead of crumbly, I don’t think it makes a huge difference. I didn’t think when I typed out the recipe. I will add the substitution now. Please come back and tell me how they turned out for you
