Zucchini and Squash Au Gratin and Summer, YAY!
I love Summer! The weather gets warm and you can go camping, swim and do all those activities you couldn’t do while being stuck in the house all winter. Also, have you noticed that vegetables just seem brighter in the summer? They do and I love picking out all of the amazing vegetables you can get during summer! Dairy products are an every day thing for me and I have to admit in the summer, after being outside all day, dairy can sit a little heavy on your stomach. Don’t worry though! I have the perfect recipe that not only has amazing summer veggie color but also dairy. My delish Zucchini and Squash Au Gratin is light and flavorful, making it perfect for summer! To make all this happen though I had to head to my neighborhood Safeway and shop!
Kids and Veggies, Oh My!
When I got there I was greeted by the most colorful veggies. Everything just screamed fresh and pick me! I had to exude extreme willpower and only picked up these Strawberries on the way to the zucchini and squash. I am really lucky because I never had a problem getting my kids to eat their vegetables. They have always been good about it, even eating brussel sprouts. Roxy even eats liver ( a favorite of mine). I love that they are adventurous and try to eat what is good for them. I have always loved veggies, fruit and cheese. I was a vegetarian for a long time until I got sick. The doctors advised me to start adding more protein such as fish and chicken. I never forced my girls into eating like I did. I gave them a variety of foods and let them choose for themselves. I had a lot of friends that were way jealous about the vegetable eating. I told them not to worry about it, they will make up for it by driving me completely batty when they are teenagers. I was right too! I now have wings and fly around after dark! The girls however will tell you that I actually fly around on a broom, but remember I am the controller of all, so they are going to try to make me look bad.
Safeway Is Where It Is At!
I know, I know enough family time, lets get to the dish! This dish incorporates very little ingredients but the flavor is excellent. It is light and easy on the stomach as well as the senses. It is perfect for cookouts and after swimming because it wont sit on your stomach like a ton of bricks. The trick is in the cheese. I use Sergento because it has a good texture but also because it is finely shredded. It is always easy to find at Safeway. This dish only needs a sprinkling of cheese to get that amazing taste. It will look so pretty on your table and it may, just may, get your kids to eat their vegetables!

- 2 tbsp. Butter
- 1 large Zucchini (sliced)
- 1 large Squash ( sliced )
- 2 Shallots ( minced )
- 1 tsp. garlic ( you can use fresh or jarred)
- ½ cup heavy cream
- Shredded Cheese ( mozzarella or provolone works best.)
- Salt and Pepper to taste
- A sprinkling of Oregano
- Parmesan cheese to taste
- Preheat your oven to 450 degrees
- In a large skillet saute your shallots and garlic in your butter. Cook until shallots are translucent.
- Add your zucchini, squash and heavy cream. Add your salt, pepper, and parmesan cheese.
- Cook 8 to 10 minutes or until mixture is bubbly.
- Transfer to an oven safe baking dish and sprinkle with a little more parmesan and your shredded cheese.
- Bake for 10 to 14 minutes or until mixture is bubbly and golden brown on top.

Just a question about the ingredients in a post for Zucchini and Squash Au Gratin by Bobbie Seacrist. When she says to use Zucchini and Squash is the squash referring to yellow crookneck squash? Thanks for your time in advance

Hi Carrie, how much you use is entirely up to you. I only use a handful, just enough to sprinkle on. But you can use a lot more if you want

Made this tonight - it’s delicious! I didn’t want to go to the store so I used a bit of yellow onion instead of shallot, and blended warmed lmilk with teaspoon of cream cheese in lieu of cream. Baked it for about 25 minutes to get it really browned. Great low carb side I’ll be making all year long.
