It is no secret I love CVS and when I found out they had re-launched their Gold Emblem line I couldn’t have been more thrilled! The Gold Emblem line is a great way to get healthy snacks for your family and stay on budget. I ran over to our CVS ( which is only 10 minutes away, yay!) to see what they offered. I was really pleased to see quite a few snacks such as Honey Mustard Pretzels, trail mix, and cookies! incorporates elevated taste standards and ingredient guidelines to exclude MSG and trans fats wherever possible making it safe and healthy. I saw the Gold Emblem Raw Almonds and knew exactly what I was going to do with them! Make the copycat Almond Joys I had been dying to try!
I have a serious love for Almond Joys but candy bars are getting really expensive, so I don’t buy them very often. I make a lot of our candy much to the girls dismay. Let’s just say they never look like they are supposed too. I love this recipe because it is super easy and only takes a few ingredients. You don’t have to be a master candy maker to make them, perfect for me! With the raw almonds I can even make them a tiny bit healthier too!
Ingredients
- 4 c (8 1/2−oz) shredded coconut shopping list
- 1/4 c light corn syrup
- 1 pk (11 1/2−oz) milk chocolate pieces
- 1/4 c vegetable shortening
- 26 Raw Natural Almonds (1−oz)
Instructions
- Spread wax paper over cookie sheet.
- In a large bowl add your coconut.
- Measure your corn syrup into a Microwaveable safe cup and heat for a minute ( until it boils)
- Pour your corn syrup over your coconut. With a spoon mix until the coconut is well coated.
- Spray some baking spray on your hands so it is not as sticky and roll your coconut into one inch balls. I never measure, I just do but you can measure them out if you want.
- In another microwaveable safe dish melt your chocolate pieces and your shortening together until it is melted.
- Stir for about 2 minutes until it has a glossy finish.
- Using the two spoon method, dip your coconut into the chocolate and then transfer to the second spoon. ( this gets rid of the excess chocolate and makes them a little neater)
- Place on your wax paper and let cool just a bit. While the chocolate is still kind of soft place an almond on top and push down slightly.
- Keep them out until they are completely hardened.
- Do not put them in the freezer or fridge to speed up the process. When you take them out and let them become room temperature they sweat. Allow them to harden naturally and then place in the fridge.
